The vast majority of honey sold in grocery stores is a blend of honeys derived from various flower sources. Typically, it is also pasteurized to prevent crystallization. This type of honey has a regular flavor and will not produce a memorable experience when pairing with cheeses.
If you'd like to try a honey that is unique, buy single floral honey. Look for honeys named after flowers such as blueberry, yellow clover, and orange blossom. This indicates the type of flower the bees gathered nectar from. The subtle flavor nuances in these honeys are wonderful with cheese. Wildflower Honey - Cheddar cheese is a relatively hard, off-white, sometimes sharp-tasting, natural cheese. Originating in the English village of Cheddar in Somerset, the cheese is a perfect option for our wildflower honey which helps smooth the sharp taste of cheddar.
Citrus Honey - Butterkaese is a semi-soft, cow's milk cheese popular in Germany. Butterkäse has a buttery flavor and appearance. It is often described as mild, partly due to its brief aging time. The softness and mildly salty or acidic flavor goes great with our Citrus honey.
